- 1/4 23 Sugar
- 1 teaspoon Lemon Juice or 1/2 lemon, cut up
- 2 tablespoons Balsamic Vinegar any flavour
- 1 dash Salt

Directions
Just like the recipe for basic granitas, this is a great dessert that can be adjusted for sweetness to go against the tartness of the citrus and balsamic vinegar. It is an ice based desert that is a little tart and great on a hot day.
Combine the water, sugar and lemon juice or lemon in a pan over medium heat. Add the balsamic and salt after the sugar has dissolved. Bring up to a simmer and turn off the heat. Let it cool on the counter before pouring into the mugs, straining if with the cut lemon. Put the mugs into the freezer. Every 10 to 20 minutes, use a fork or small spoon to stir the freezing liquid. It is ready once the ice crystals have set, about 2 hours.
If you have more time, use a larger pan in the freezer and you can leave it in for up to 4 hours, stirring every hour or so.
When serving, you can pair it with strongly flavored fruits or fruit-flavored alcohol for a more adult dessert.
